Even layer of cream, then a nice dollop of jam in the middle. I'm no purist. I'd even go so far as to say I prefer a fruit scone in this scenario....

Good man. Josh's way is the dirty Cornish approach whereas (according to Stephen Fry, I think) cream then jam is a Devon cream tea.
